The tea buds sprout and grow before the beginning of spring, and are harvested from late February to mid-March. The tea harvested during this time is also known as "early spring tea", while the regular spring tea is harvested from late March onwards.
After a whole winter of rest, and with relatively weaker sunlight intensity during early spring, the tea has less tannins. Therefore, after being skillfully processed by tea artisans, the tea leaves have a smoother and less bitter taste.
